2 cups biscuit baking mix
2/3 cup milk
1/8 cup butter, softened
1/4 cup sugar
1 tsp cinnamon
Mix the biscuit baking mix and milk in a small bowl with a fork. 
Knead the dough gently about 8 to 10 times on a lightly floured surface. 
Roll into a 12 x 7 inch rectangle. 
Spread thinly with the butter. 
In a separate small bowl, mix the sugar and the cinnamon. 
Sprinkle the dough with the sugar mixture. 
Roll up tightly, starting with the long end. 
Pinch the edges to seal. 
Cut into one-inch slices and put one slice in each cup
of a lightly oiled muffin tin. 
Bake at 425 F for 15 minutes or until the rolls are lightly golden.
Makes about one dozen
